Spiced Shakshuka

Spiced Shakshuka

Eggs poached in a smoky tomato-pepper sauce with fresh herbs.

Ingredients

  • 6 large eggs
  • 1 can (400g) crushed tomatoes
  • 1 red bell pepper, diced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp chili flakes
  • 2 tbsp olive oil
  • Fresh cilantro and feta for serving

Instructions

    Heat olive oil in a large skillet over medium heat. Sauté the onion and bell pepper until softened, about 5 minutes.

    Add the garlic, cumin, paprika, and chili flakes. Cook for 1 minute until fragrant.

    Pour in the crushed tomatoes and simmer for 10 minutes until thickened.

    Make 6 small wells in the sauce and crack an egg into each.

    Cover and cook for 5-7 minutes until egg whites are set but yolks are still runny.

    Garnish with fresh cilantro and crumbled feta. Serve with crusty bread.
