Citrus Salmon Bowl
Seared salmon over jasmine rice with yuzu dressing and avocado.
Ingredients
- 2 salmon fillets (150g each)
- 1.5 cups cooked jasmine rice
- 1 ripe avocado, sliced
- 1 cup edamame, shelled
- 1 carrot, julienned
- 2 tbsp soy sauce
- 1 tbsp yuzu juice (or lemon)
- 1 tsp sesame oil
- 1 tsp honey
- Sesame seeds and green onion for garnish

Whisk together soy sauce, yuzu juice, sesame oil, and honey to make the dressing.

Season salmon fillets with salt and pepper. Sear skin-side down in a hot pan with a little oil for 4 minutes.

Flip and cook for another 3 minutes until just cooked through.

Divide the jasmine rice between two bowls. Arrange avocado, edamame, and carrot alongside.

Place the seared salmon on top and drizzle generously with the yuzu dressing.

Finish with sesame seeds and sliced green onion.
